Guest Chef Roberto D’Aquino to Delight Diners

From January 17 to March 9, 2026, Roberto D’Aquino, whose stellar career spans prestigious kitchens such as Harrods London, as well as roles as an independent master chef in Singapore and exclusive gastronomic projects in Spain, will be based at Prego by the Beach, the resort’s vibrant Italian ristorante that overlooks the Andaman Sea.

Guests Invited to Embark on a Journey to the Amalfi Coast

Throughout Chef Roberto’s residency, guests will be able to embark on a multi-sensory journey along the Amalfi Coast, the idyllic and highly evocative region of southern Italy, with a special limited-time menu that celebrates the freshest seafood and time-honored Italian culinary traditions.

The journey begins with an elegant Seafood Salad featuring fresh prawns, calamari and clams, delicately tossed with extra virgin olive oil, garlic, parsley, and lemon. A true taste of Italian comfort then arrives with Parmigiana di Melanzane, layers of softly-fried eggplant lovingly baked with tomato sauce, mozzarella, parmesan cheese, and fresh basil – a timeless classic from the Italian family kitchen. Seafood lovers will appreciate Penne Gamberi e Zucchine, al denté pasta served with prawns and zucchini in a delicate sauce that balances lightness and depth. Completing the experience is Barramundi Fillet alla Puttanesca, pan-seared to perfection and complemented by a bold Mediterranean sauce of tomato, olives, capers, garlic, and herbs.

This special menu will be available from January 17 to March 31, 2026, with dishes priced individually, starting from THB 540.
