CHEF ALEXANDER HORWAT UNVEILS INNOVATIVE NEW “EAST MEETS WEST” MENU AT THE AWARD-WINNING BIG FISH & BAR, HUA HIN
Hua Hin Marriott Resort & Spa, the idyllic beachfront retreat on Thailand’s golden gulf coast, has unveiled a new “East Meets West” menu which fuses the finest elements of Asian and European cuisine, at Big Fish & Bar, its award-winning signature seafront restaurant.
This innovative new menu has been expertly crafted by Alexander Horwat, the exciting young head chef at Big Fish & Bar, who has worked with leading Michelin-starred chefs at world-renowned hotels and restaurants in Europe, and even ran his own restaurant, Horwat, in his native Austria.
Chef Alex has now used his expertise to devise an inventive five-course menu that takes inspiration from his European culinary heritage and his exotic Asian surroundings. Using high quality local and seasonal ingredients, including meat, dairy, vegetables and herbs from nearby organic farms, and sustainably sourced seafood from fishing communities around Hua Hin, the East Meets West menu is a truly memorable dining experience.
Guests start their culinary journey with an amuse bouche of scallop ceviche with avocado, peanuts, Granny Smith apple and Thai herbs – a wonderfully light and fresh dish that sets the tone for the rest of the menu. Following this, an ice-chilled cucumber soup is served with a crispy lobster roll, miso mayo and keta caviar – a luxurious dish that amplifies the exquisite flavors of premium ingredients.
The starter of crispy fillet of sea bass with fennel in a bouillabaisse broth blends the best of classic French cookery with subtle yet distinctive Asian elements to create a wonderfully deep and aromatic dish. The main course, slow-braised pork cheeks with pearl barley, wasabi, wild broccoli and radish, combines locally-sourced meat that is so tender that it melts in the mouth, with carefully selected Asian accompaniments to create a unique dish that will linger on the taste buds, and in the memory.
This five-course culinary masterpiece concludes with Chef Alex’s Signature Dessert – a sublime and surprising sweet treat that guests simply have to taste!
This enticing five-course menu is now available at Big Fish & Bar, which has become one of the most desirable dining destinations on Thailand’s gulf coast. Nestled directly on the beachfront, overlooking the shimmering sea, this vibrant venue was recently named as the top “Luxury Resort Restaurant” in Asia and the best “Luxury Beachside Restaurant” in the world at the 2019 World Luxury Restaurant Awards.
