Bangkok, Thailand, 17 December 2023 – The St. Regis Bangkok invites guests to celebrate the changing of the seasons with a new Winter Menu at IGNIV Bangkok (1 Michelin Star) throughout December 2022 to February 2023.
For the latest 4-course fine dining sharing menu, Head Chef David Hartwig revisits memories of the European winter of his childhood, combining them with fresh produce currently in season in Thailand, IGNIV’s first international outpost outside of its native Switzerland.
Resulting dishes feature herbs and fresh vegetables that showcase the Thai season such as Cucumber—Dill—Yuzu, Kohlrabi—Viola—Crab, and Tomato—Burrata—Sesame—Pepper. A festive classic in the West, Domino Stones are presented as Domino Stone—Foie Gras—Sea Buckthorn in an indulgent pairing of flavors.
Other typical comfort ingredients associated with European winter include Bergfichte—Gingerbread and Goat Cheese—Pumpernickel, as well as a Tartlette—Truffle—Onion featuring the prized Black Winter Truffle.
Combining the inspirations of two very different wintertime destinations are the mains, including Broccoli—Almond—Chimichurri and a raclette-style Potato—Gruyère—Mustard—Truffle, as well as Deer—Smoked Beetroot—Yogurt made with game meat sourced from northern Italy.
For desserts, Swiss inspired flavors and techniques take the centerstage in creations such as Thai Rhubarb—Vanilla and Strawberry—Red Pepper. Another classic flavor evocative of the season, the flavorful Soufflé is made with Chanthaburi chocolate, following IGNIV Bangkok’s philosophy of sourcing locally as much as possible.
Towards the end of the multi-course gastronomic journey, guests enjoy a choice of house-made macarons, fruit jellies, chocolates, and other delights from IGNIV’s signature Candy Store to enjoy with coffee or tea, or to take home.
The Winter Menu at IGNIV Bangkok is available Thursday to Monday for dinner (5:30 PM – 12:00 AM, last order 9:30 PM) and from Saturday to Sunday for lunch (12:00 PM – 3:00 PM, last order 2:00 PM) for THB 4,500++ per person.
